The 2019 Nine Oaks Khikhvi is a rare and characterful dry amber wine produced entirely from the native Khikhvi grape—a variety with less than 1,000 hectares planted across Georgia. The grapes are hand‑harvested, destemmed, and fermented spontaneously with wild yeasts at a controlled temperature (around 22 °C), undergoing an extended 28‑day skin maceration in large Qvevri (4000 L clay amphorae), followed by lees aging and careful racking over a full year before bottling.
