NV Domaine Nowack "Sans Année" (S.A.) is a meticulously crafted, terroir-driven Champagne made from a blend of 60% Pinot Meunier and 40% Chardonnay. It stands out for its zero-to-minimal dosage (usually 1 g/L) resulting in a vibrant, bone-dry profile that emphasizes the raw energy of the grapes. 

The vinification process at Domaine Nowack focuses heavily on low-intervention and natural expression.  Fermentation is spontaneous, relying on indigenous, native yeasts. The vins clairs are fermented and aged in a combination of stainless steel vats and small oak barrels. The juice is not chaptalized, fined, filtered, or cold-stabilized. They are allowed to naturally undergo malolactic conversion during the spring, which softens the acidity and adds a creamy, vinous texture to the final wine. Instead of utilizing traditional commercial yeasts and liqueurs, Flavien Nowack often uses unfermented organic grape must for the prise de mousse (secondary bottle fermentation). The wines are frequently aged under cork during this time, rather than a standard crown cap.
